    Strap in for an amazing avocado recipe: creamy, poached eggs in soft, fresh, avocados. Yummm! The best part about such a delicious meal? It’s not only satisfying but incredibly healthy. Avocados are a superfruit full of essential nutrients. Eggs are in a class all their own; they are likely the closest thing to a perfect food item for a human’s diet. These baked eggs in avocado only take a total of 25 minutes to prepare from start to finish and, when you’re done, there is enough food for two people.

    How To Make Baked Eggs In Avocado


    • 1 avocado
    • 2 small eggs
    • 2 slices bacon
    • 2 teaspoons fresh chives
    • 1 pinch sea salt
    • 1 pinch dried parsley
    • Black pepper, to taste

    • Preheat your oven to 425 degrees Fahrenheit (220 degrees Celcius).
    • Cook your bacon in a medium skillet to your desired consistency, though we recommend them crispy. When the bacon is done, crumble it and set it aside.
    • Cut the avocado in half and remove the pit. Chop the chives.
    • Crack both eggs into a bowl, careful not to break the yolks.
    • Arrange the avo halves in a baking dish with the fresh green fruit facing up. The “bowl” left by the pit should be as level as possible. To keep it level, try propping the avocado halves carefully against the side of the baking dish.
    • Gently spoon one egg yolk into each avocado half. Distribute the egg white into both halves until they are full. 
    • Season each avocado half with chives, parsley, salt, and pepper.
    • Place the baking dish in the oven and bake for about 15 minutes, until the eggs are cooked.
    • Lastly, sprinkle the bacon crumbles over the top of your baked eggs in avocado!
