    Looking for a fantastic, fresh, meatless meal? Look no further than this Farmer’s market salad with corn and avocado. If you’re in the mood for more protein, add grilled chicken or steak on top.

    How To Make A Farmer’s Market Salad

    This solid recipe serves 4.

    Ingredients

    • 2 ripe avocados, peeled, pitted, chopped
    • 4 radishes, sliced thinly
    • 4 scallions, thinly sliced
    • 2 tomatoes, cored and thickly chopped
    • 6 ears of fresh corn
    • 2 cloves garlic, finely chopped
    • ½ red onion, coarsely chopped
    • 2 limes, grated rind, and juiced
    • 1 poblano chile pepper, stemmed, seeded, chopped
    • 3 tablespoons olive oil
    • 4 tablespoons chopped basil
    • 1 tablespoon honey or agave syrup
    • Salt and pepper, to taste

    Instructions

    • Carefully remove the corn kernels from the cob.
    • First, in a large skillet, heat the olive oil over high heat. Next, add the poblano and red onion to the pan and cook without stirring for 5 minutes or until the vegetables are charred.
    • Then, stir in the corn and garlic. Stir often and cook for 2 minutes.
    • When it’s done cooking, place the corn mixture into a small bowl and sprinkle with lime juice, salt, and pepper. Drizzle the honey on top and toss everything together. Let the mixture cool to room temperature.
    • Once everything cools, add the tomatoes, 2 tablespoons of basil, scallions, and half the avocado, and gently toss again.
    • Transfer the mixture to a large platter and garnish with the radishes and the rest of the avocado and basil.
