    Baked Avocado Boats

    Stuffed avocados are arguably the best way to consume nature’s superfruit. Pair it with egg, another superfood, and bacon, a sure-favorite in any crowd, and you’ve got a literal recipe for success. Read on to learn how to bake your very own avocado boats right at home. 

    How to Bake Avocado Boats

    This recipe yields 4 servings and has 220 calories per serving. The prep time takes about 10 minutes and the entire recipe will take you about 40 minutes to prepare.


    • 2 ripe avocados
    • 4 large eggs
    • 3 slices of bacon
    • Salt and pepper, to taste
    • Fresh chives, for garnish


    • Preheat your oven to 350 degrees Fahrenheit. 
    • While the oven heats, cut your avocados in half and remove the pits. Scoop out a tablespoon of avo and either save it for another recipe or discard. Place your hollowed avocado boats in a baking dish.
    • Crack your eggs into a medium bowl. Use a spoon to gently scoop one egg yolk into each avocado boat. Then, spoon enough egg whites into each until they are filled but not spilling over. 
    • Season with salt and pepper, bake about 20 to 25 minutes until whites are set and yolks are not runny. If the avos begin to brown, cover them with tinfoil. 
    • While the avocado boats bake, cook the bacon in a large skillet over medium heat for about 8 minutes. When the bacon is crisp, remove it from heat and transfer to a paper towel-lined plate. Chop the bacon.
    • Remove the boats from the oven and top with the bacon pieces and chopped chives. Serve immediately.
