How To Make Avocado Monster Eyes
Ring in your Halloween party right with this creepy snack. This recipe will take 30 to 40 minutes and makes 24 eyes.
Ingredients
- 1 avocado, needs to be very ripe
- 10 to 12 large eggs, boiled
- 2 tablespoons dill relish
- 2 teaspoons lemon juice
- Black olives, sliced
- Red food coloring
- Salt and pepper, to taste
- Mayonnaise (optional)
You will also need a soft, new paintbrush.
Instructions
- Peel the boiled eggs and cut them in half, lengthwise. Carefully scoop out the yolks.
- In a medium bowl, mash together egg yolks, avocado, and lemon juice. For additional creaminess, add mayonnaise one teaspoon at a time until you’re satisfied. Season with salt and pepper.
- Add a tiny bit of red food coloring to a spoon and, using the paintbrush, carefully paint bloodshot streaks onto the eggs.
- Spoon the avocado mixture into the eggs and top each with a sliced black olive for a pupil.
- Store in the refrigerator until ready to serve, preferably no more than 6 hours.
