    Double Chocolate Cookies With Avocado and Applesauce

    Each cookie has 152 calories per serving and they take about 30 minutes to make. The recipe yields 24 cookies and is from the Skinny Taste Cookbook. 


    • ¼ cup avocado, mashed
    • 1 large egg white
    • ½ cup sugar
    • ½ cup whole wheat flour, unbleached
    • ½ cup walnuts, finely chopped
    • ⅓ cup dark brown sugar, unpacked
    • ⅓ cup unsweetened cocoa powder
    • ⅓ cup all-purpose flour
    • ⅓ cup cocoa powder, unsweetened
    • ⅓ cup semisweet chocolate chunks
    • 1 tablespoon applesauce, unsweetened
    • 1 teaspoon vanilla extract
    • ¼ teaspoon baking soda
    • ⅛ teaspoon kosher salt

    Instructions For Double Chocolate Cookies With Avocado

    • Preheat oven to 350 degrees Fahrenheit. Grease baking sheets using nonstick cooking spray or line with silicone baking sheets.
    • In a large bowl, mix both sugars and avocado, applesauce, egg, and vanilla. Whisk well until the sugar dissolves, between 2 and 3 minutes. 
    • In a separate large bowl, mix together flours, cocoa powder, baking soda, and salt. 
    • Fold the dry ingredients into the avocado mixture in 2 batches with a spatula. Then, gently fold in the chocolate chunks and walnuts. The dough should be very sticky. Cover the bowl with plastic wrap and refrigerate it for 15 minutes.
    • Take the dough out and place tablespoons of dough on the baking sheets about 1 inch apart. Spray cooking spray on a spoon and ue the back of it to smooth out the tops of the dough balls.
    • Bake the chocolateb cookies with avocado until they’re almost cooked through, between 10 and 12 minutes. Remove the cookies from the oven and let them cool for 5 minutes on the pans, then transfer them to wire racks to finish cooling.
